This course is dedicated to the study of nutrient families, or macronutrients and micronutrients, which are the elements that form the basis of our food. In addition to describing these different elements, we will also go over their physiological and metabolic aspects. The goals of this course are twofold: First, students must understand the role of the main nutrients, such as protein, fats, carbohydrates, fibre and water. Second, students must know and understand the impact of vitamins and minerals on human health as well as their interactions and bioavailability. Students must also become familiar with the concepts of physiology and metabolism so that they can incorporate these concepts into a comprehensive and personalized approach.
